Our Premium Japanese Green Tea is organically grown in Nakakawane Shizuoka, Japan, the best known area to grow the highest grade tea, by a grower who has been producing tea products for over 50 years.
Just like a glass of fine wine each tea has its' own aroma , taste and color. All of our teas are very faithful to traditional processing methods. We have decided to only carry "best of class" teas, currently we have a relatively limited line of teas.
Most Japanese green teas are fragrant, refreshing and vegetal, with light to deep green color and beautifully shaped leaves. A special processing style contributes to the distinctiveness of Japanese green teas: after picking, the leaves are immediately steamed, then air dried, to preserve their fragrance, color and flavor.
The flavor, quality and character of tea is completely dependent on the region, the altitude, the type of soil and climate in which it is grown. An extreme amount of care was taken in the selection and development of a relationship with our producer. As it is an entirely natural product, single estate teas will never be exactly the same each time. Much of the pleasure of these teas comes from experiencing and understanding these differences.
Japanese Sencha - ( meaning " Common tea ") is the most popular green tea. There are many grades of Sencha - from budget priced grades to a very fine grades.
Japanese tea tradition dates back many centuries with some of the oldest tea farms existence. Green tea from Japan tastes different than their Chinese counterparts. The difference is not in the tea plant, but methods of processing. The main difference is in the first step which is aimed at stopping oxidation (fermentation) where as Chinese teas are roasted over fire and Japanese teas are steamed.
This process gives the tea a very delicate and delightful flavor. Sencha is one of the exquisite teas with a very delicate taste and aroma. There are many varieties of Senchas with prices from a few to a few hundred dollars per ounce. In good quality tea the most important factor is processing - less steaming means retention of flavor, aroma and nutrients
